Due to requests and our inventory levels, we've decided to include an a la carte option for some of our cuts that we feel can be a healthy, delicious, and easy option for families.

About the cuts available: 

Round Steak--average weight 1.8lbs 

An overlooked medium cut, Round Steaks can be an easy, tasty cut for dinners. We recommend marinating prior to cooking and slicing against the grain. Round can be used to make roast beef for sandwiches, stir fry, steak and gravy; we've even seen people use it for fajitas, making this cut a pretty versatile one. 

 

Chuck Roast--average weight 3lbs 

Easiest cut to set and forget, chuck roasts are versatile. Use them in stews, pulled beef sandwiches, on top of mashed potatoes, polenta, or noodles, it's all good. Chuck roast is best cooked low and slow--sear the sides of the roast, then put in your oven at a low temp for 5-6 hours and your good. It'll make your house smell amazing all day. 

 

Arm Roast--average weight 3lbs

Another overlooked cut, arm roast cooks similarly to a chuck roast (sear then low and slow) and can be used for the same recipes as a chuck roasts, but is known for being more tender than the chuck roast. Arm roasts also have generally less fatty tissue than a chuck roast and have one large circular bone in the cut. 

 

Osso Bucco--average weight 1.25lbs  

Many cultures outside of the US consider osso bucco the tuxedo of beef cuts. It looks fancy and impressive but is consistently tasty and a perfect dinner option. The bone in the of the shank releases bone marrow as it cooks, adding even more depth of flavor to your dish. Our akaushi influence beef means above average marbling, so braise it low and slow and you won't be disappointed.
